Paleo Chocolate Chip Cookie Dough Bars

Let me introduce you to my sweet Paleo obsession.  About 6 months after I had Ezekiel, I really started itching to lose my baby weight.  I decided to kick my butt into gear and go full-time Paleo for 1 month.  The problem was my huge sweet tooth.  I really have to dig real deep for self control to say not to sweets.  Enter these Paleo Chocolate Chip Cookie Dough Bars.  These bars are 100% paleo – grain free, gluten free, refined sugar free, dairy free.  Yet, they taste like real cookie dough and satisfy your sweet tooth like no other.

The best part about these bars is that they take minutes to whip up.  The ingredients are simple and are made in one small bowl. The 4 main ingredients in these Cookie Dough Bars are almond flour, coconut flour, coconut oil, and maple syrup.  After mixing together the ingredients, you press the dough into a baking dish and place it in the freezer to chill completely.  It doesn’t take long until your stuffing your face with these amazing bars.  And guess what — no guilt!

Chocolate Chip Cookie Dough Bars that are 100% Paleo - Grain Free, Gluten Free, Refined Sugar Free, & Dairy Free.
  • 1¼ cups Almond Flour
  • ¼ cup Coconut Flour
  • ½ teaspoon Salt
  • ⅓ cup Coconut Oil, Melted
  • ¼ cup Maple Syrup
  • 2 tablespoons Honey
  • 2 teaspoons Pure Vanilla Extract
  • ¼ cup Enjoy Life Mini Chocolate Chips
  1. Grease the bottom of 9x9 baking dish with Coconut Oil cooking spray. I recommend a glass baking dish, but a metal one will work too.
  2. In a medium bowl, whisk together the almond flour, coconut flour, and salt.
  3. Make a well in the center of the bowl and add the remaining ingredients, except the chocolate chips - coconut oil, maple syrup, honey, and vanilla.
  4. Stir in the chocolate chips.
  5. Press the dough into the prepared baking dish, and place in the freezer to chill completely - It should take around 30 minutes to 1 hour to chill.
  6. Once the dough is chilled, remove the dish from the freezer and place on the counter to thaw slightly.
  7. Using a sharp knife, cut the cookie dough into small bars. Transfer the bars in a sealed container or plastic bag and place them back in the freezer until ready to enjoy.
  8. These bars are best stored in the freezer. They last for quite a long time in the freezer, but I like to enjoy them within a month or so.

    Love how this is a healthy snack! Tastes just like cookie dough too! With zero risk of salmonella poisoning haha which is clearly an added bonus!
