Cherry Coffee Scones

Happy National Donut Day!  No, these aren’t donuts.  They are Scones.  Cherry Coffee Scones to be exact. So why am I sharing Scones on National Donut Day?  Because I couldn’t wait one more day to share these scones with you.  I assure you, these are worth it — They are delicious. AH-mazing. Seriously.

Before I convince you on why these are one of the best scones I’ve ever made, let me rant explain my passion for donuts.  There truly in nothing like a good old fashioned Sprinkle donut.  The best.  But Nomad Donuts in San Diego has slowly changed my mind on my favorite type of donuts.  They are incredibly fluffy, perfectly baked Donuts fashioned into the most unique flavors.  #nothisisnotanad #ijustloveNomadthatmuch  Will I be paying a visit to Nomad tomorrow? You betcha.

Now onto these Scones.  One bite and I couldn’t put it down.  Most scones are just so incredibly dry and tasteless.  These are just the opposite.  They are super soft and fluffy, almost a cross between a cake and a pastry dough.  #1 of the scones is the texture, #2 is the coffee flavor.  The addition of the coffee really packs a punch into these scones.  Coffee is not only added straight into the dough, but it’s also in the perfectly sweet Coffee Glaze.  Then you get these little bites of dried cherries throughout the scones — heaven.

Cherry Coffee Scones

Soft and Fluffy Scones, filled with Coffee and flecks of Dried Cherries, topped with a perfectly sweet Coffee Glaze
For the Dough
  • 2 ¼ cups All Purpose Flour
  • 1 tablespoon Baking Powder
  • ¾ teaspoon Salt
  • 3 tablespoons Sugar
  • 5 tablespoons Unsalted Butter, Cold
  • 1 cup Heavy Cream
  • ¼ cup Coffee*
  • ⅓ cup Dried Cherries, Chopped
  • *If you don’t have coffee on hand, you can mix 1 tablespoon of Coffee Crystals with ¼ cup Water.
Coffee Glaze
  • 2 cups Confectioners Sugar
  • 4 tablespoons Water
  • 1 tablespoon Coffee Crystals**
  • ¼ teaspoon Pure Vanilla Extract
  • **You can use 4-5 tablespoons of Coffee if you don’t have Coffee Crystals.
  1. Preheat the oven to 400 degrees F.
  2. Combine the flour, baking powder, salt, and sugar in a large bowl. Cut the butter into ¼ inch squares, and add it to the flour mixture. Using your hands, or a fork, break up the butter so it incorporates into the flour mixture.
  3. When the butter pieces are no bigger than small peas, and the mixture is crumbly, make a well in the center and add the heavy cream and coffee. Using a spatula, fold the mixture until the liquid is fully incorporated into the flour mixture. Carefully fold in the dried cherries. You can either use a spatula or your hands.
  4. Pour out the dough onto a lightly floured surface. The dough will be slightly sticky, so I lightly coated all sides of the dough so it’s easier to work with. Using your hands, carefully press the dough out into a rectangle that is 1 ¼ inches thick. Try to press it out until it is about 10 by 5 inches. However, if you can’t get it this big, don’t worry – just work with what you have.
  5. Cut the rectangle vertically in half. Cut the 2 long pieces into 6 rectangles, and cut each rectangle in half, making 12 medium-sized scones.
  6. Place the scones onto a baking sheet lined with a silicone mat, or parchment paper. Bake until golden brown, about 15 minutes. Transfer the scones to a cooling rack to cool completely.
  7. While the scones are cooling, make the coffee glaze. In a small bowl, whisk together confectioners sugar, water, coffee crystals, and vanilla.
  8. To dip the scones, grab 1 scone and dip the top half of the scone into the glaze. Place on a cooling rack to allow the glaze to harden. Repeat with the remaining scones. Serve once the glaze has hardened, about 15-30 minutes.
  9. These last up to 4 days in a sealed container.

PS – Tomorrow is my husband’s and I 6-year Wedding Anniversary.  6 years!  Can you believe it?!  I can’t. What I can’t believe even more is that I’ve been married for 6 years AND I have 2 kids.  Woah.  Life is crazy.  Crazy, but so so good! {Happy Anniversary hubby, love you more than anything. I wouldn’t want life any other way.}
