4th of July Vanilla Bean Buttermilk Baked Donuts

Happy {early} 4th of July!

Today I have the perfect 4th of July treat.  It’s a baked donut made with vanilla bean and buttermilk, topped with a blue glaze with red and white sprinkles on top.  It’s a definite winner!

When thinking of a good 4th of July dessert, I wanted to come up with something that is patriotic but not too overwhelming.  I mean last year I made this Patriotic Stained Glass Jello and that was ah-mazing!  I had to think of something just as summery and patriotic, but still stood out.  While scouring the internet I found these Vanilla Bean Donuts.  They were my perfect answer!  Who doesn’t love donuts, and especially ones that celebrate this wonderful holiday oh-so-perfectly.

I’ll tell you this… Ezekiel loved them! {Don’t worry, I didn’t give him a donut.  I’m the mom who let him pick it up and lick it, but then took it away.  Sorry Zekey!}

Vanilla Bean Buttermilk Donuts

Makes: About 8 Baked Donuts (Baked in a regular-size Donut Pan)
Baked Donuts
2 cups Cake Flour
¾ cup Sugar
2 teaspoons Baking Powder
1 teaspoon Salt
¾ cup Buttermilk
2 Eggs
2 tablespoons Unsalted Butter, Melted
1 teaspoon Pure Vanilla Extract
1 Vanilla Bean, Split and Seeded
Vanilla Glaze
1 cup Confectioners Sugar
1 tablespoon Milk
1 teaspoon Pure Vanilla Extract
Blue Food Coloring, Optional
Sprinkles, Optional
To make the donuts, preheat the oven to 425 degrees F.  Spray the donut pan with non-stick cooking spray and set aside until needed.
In a large bowl, stir together the cake flour, sugar, baking powder, and salt.  Set aside.
In a medium bowl, whisk together the buttermilk, eggs, melted butter, vanilla extract, and vanilla bean seeds.
Make a well in the center of the dry ingredients and pour the buttermilk mixture into the well.  Using a wooden spoon, carefully mix the batter.  Place the donut batter in a large ziploc bag and snip off the lower corner.  Using this “piping bag” fill each donut pan 2/3 of the way up.
Place the donut sin the oven to bake until lightly golden and a toothpick stuck into one of the donuts comes out clean, about 8 minutes.  Once finished, allow the donuts to sit in the pan for a few minutes (until they are a little bit easier to handle), and then transfer to a cooling rack to cool completely.
When the donuts are almost done cooling, make the glaze.   In a medium whisk together all of the ingredients – confectioners sugar, milk, and vanilla.  If you would like to add color to the glaze, now is the time to add a few drops of food coloring.
Dip the tops of each donut into the glaze and then place on a wire rack to dry.  If you would like, you can sprinkle some sprinkles on top of the donuts immediately after being dipped into the glaze.
These donuts last up to 4 days in a sealed container.
