Paleo Blueberry Muffins {Gluten Free, Grain Free, Refined Sugar Free, Dairy Free} & WINNER ANNOUNCED

Today I have a healthy, sweet treat for you.  About a month or so ago I tried out the Paleo Diet.  It consists of eating fresh, whole food, emphasizing on clean meats, fruits and vegetables.  You mainly eliminate grains, dairy, legumes, and refined sugar.  Leaving you with eating super healthy, yet still super satisfied.  I went completely Paleo for a few weeks, but then moved to a modified Paleo diet.  Now I eat less grains, dairy, and refined sugar, yet of course still enjoy the my favorite foods, without over indulging.

While on the Paleo Diet I fell in love with baking different types of Paleo treats.  I started baking with coconut and almond flour, coconut milk, and maple syrup/honey, instead of the normal AP flour, milk, butter, and sugar.  I quickly realized that these healthier treats are just as satisfying as my normal muffins, cakes, and cookies.  Still even today I bake these Paleo goodies and truly enjoy every bite!

Everything in this book is amazing.  These muffins seriously taste like a normal muffin.  And the best part is that these muffins are healthy!  Finally I can enjoy a baked good and feel good about it!

Paleo Blueberry Muffins with Pecan Crumble Topping {Gluten Free, Grain Free, Refined Sugar Free, Dairy Free}

Makes: About 16 Muffins
For the Muffins
2/3 cup Coconut Flour, Sifted
1 teaspoon Baking Powder
¼ teaspoon Ground Cinnamon
½ teaspoon Salt
8 Eggs, Beaten
2 teaspoons Pure Vanilla Extract
½ cup Pure Maple Syrup
½ cup Coconut Milk
½ cup Coconut Oil, Melted
1 cup Fresh Blueberries
For the Pecan Crumble Topping
4 tablespoons Almond Meal
½ cup Chopped Pecans
2 tablespoons Maple Syrup
2 tablespoons Coconut Oil, Melted
Pinch Salt
To make the muffins, preheat the oven to 350 degrees F.  Line cupcake tins with baking liners; set aside until needed.
In a medium bowl, whisk together the coconut flour, baking powder, cinnamon, and salt.  Add the eggs, vanilla, maple syrup, coconut milk, and coconut oil, and stir to combine.  Carefully fold in the blueberries.
To make the topping, stir together all the ingredients (almond meal, pecans, maple syrup, coconut oil, and salt).
Using an ice cream scoop, evenly divide the batter among the prepared baking liners; be sure to fill the liners ¾ of the way up.  Sprinkle the topping on top of each muffin.  Bake the muffins until a toothpick inserted into the center of a few of them comes out clean, about 20-30 minutes.  Once done baking, allow the muffins to cool in the pan for a few minutes and then transfer the muffins to a cooling rack to cool completely.

    These are pretty good, but I have to say, since being new on the Paleo diet, I have not found anything to taste like a wheat bread / muffin, but this is pretty yummy. Love the protein content! This is just hard to get used to! I am a bread LOVER so, this will have to grow on me! 😉 thank you for the great recipes!

    Has anyone tried replacing the maple syrup with xylitol or another sugar alternative? I’m on a Candida cleanse and looking for some satisfying recipes.
