Today I have a healthy, sweet treat for you. About a month or so ago I tried out the Paleo Diet. It consists of eating fresh, whole food, emphasizing on clean meats, fruits and vegetables. You mainly eliminate grains, dairy, legumes, and refined sugar. Leaving you with eating super healthy, yet still super satisfied. I went completely Paleo for a few weeks, but then moved to a modified Paleo diet. Now I eat less grains, dairy, and refined sugar, yet of course still enjoy the my favorite foods, without over indulging.
While on the Paleo Diet I fell in love with baking different types of Paleo treats. I started baking with coconut and almond flour, coconut milk, and maple syrup/honey, instead of the normal AP flour, milk, butter, and sugar. I quickly realized that these healthier treats are just as satisfying as my normal muffins, cakes, and cookies. Still even today I bake these Paleo goodies and truly enjoy every bite!
