White Chocolate Strawberry Blondies

How was y’all’s Easter? We had an amazing Easter together as a family.  We started the day giving Ezekiel his first Easter basket.  It was so cute seeing him “playing” with the toys.  Then we went to church and went to an amazing brunch; Ate way to much food, and then came back home and took Ezekiel to the park.  He went on the swings for the first time and loved it!  A truly great day.

Now onto these lovely Blondies.  I pin so many different desserts to my Pinterest Board, but to tell you the truth I rarely ever go back and bake those recipes.  But one day when I wanted to bake something but didn’t have anything in mind, I pulled up bars/cookies board and saw these White Chocolate Strawberry Blondies from Love and Olive Oil.  I mentioned them to my husband and he was all about them.  He loved both White Chocolate and Strawberries so it was a given he would love these.

Turns out we loved these bars even more than we thought.  They were moist and light, and not super dense like most other blondies.  The white chocolate was hinted throughout the entire blondie and the strawberry, of course, added a wonderful sweet touch.  Best thing about these bars – they whip up in just a few minutes!  These are definitely added to my go-to dessert list.

White Chocolate Strawberry Blondies

Makes: About 16 Squares, Baked in an 8×8-inch dish
5 ounces White Chocolate, Melted
1/3 cup Unsalted Butter, Cut into ½-inch pieces
2/3 cup Granulated Sugar
2 Eggs
1 teaspoon Pure Vanilla Extract
1 Cup All Purpose Flour
¼ teaspoon Baking Powder
¼ teaspoon Salt
1 cup Fresh Strawberries, Hulled and Sliced
Preheat the oven to 350 degrees F.  Line an 8×8-inch baking dish completely with parchment paper; be sure to leave some of the parchment paper hanging over the sides of the dish.  Lightly grease the parchment paper.  Set aside until needed.
Place the white chocolate and the butter in a heatproof medium-size bowl and set the bowl over a pot of simmering water.  Stirring occasionally, melt the white chocolate and butter until smooth.  Remove the bowl from the heat and stir in the sugar.
Whisk in the eggs and vanilla.  Add in the flour, baking powder, and salt, and stir until fully incorporated.  Fold in the sliced strawberries.
Pour the batter into the prepared baking dish, and bake until a toothpick inserted into the center of the blondies comes out clean, about 20 minutes.
Remove the pan from the oven and allow the blondies to cool completely in the pan.  Once cooled, grab the parchment paper and carefully remove the blondies in one whole piece.  Cut the blondies into 16 squares.
Serve and enjoy!
