Soft Sprinkle Sugar Cookies for my 2 Year Blogiversary!

This week was my 2 year Blogiversary!  It’s crazy because I feel like I have been blogging forever, but when I look back it’s just a short 2 years since I started Krissy’s Creations.  No matter how long I have been blogging, I can tell you this — I have learned a lot in these past 2 years.  I started out knowing nothing about photography.  Now I have a good sense of how to take a good picture, especially for food.  I can’t even tell you how much it bothers me looking at my past pictures.  I wish I could go back and re-make and re-take all of my pictures from at least the first year.

Two years ago my baking abilities were definitely there, but not even close to what they are now.  I had confidence that I could bake anything back then, but when it came down to it, I really couldn’t do it all. Now, I’m pretty darn close.  I’m really proud how far I’ve come in just a couple years and I can’t wait to see how things change in the next 2 years (and more!).
For my 2 years Blogiversary I wanted to make something super special, and screams me.  I contemplated baking a cake or cupcakes, but nothing really stood out to me.  And then I thought about these cookies.  These are the number one cookies I bake.  I make them for almost every party and everyone always raves about them.  What I like best about them is that they aren’t over-the-top, yet they are dangerously delicious.  They are simple sugar cookies that are incredibly soft.  I roll them in different types of sprinkles (I, of course, match the sprinkle colors to the occasion I’m baking them for), that makes these cookies more unique and eye-catching.
For this special day I rolled the sprinkles in all types of colored sprinkles, putting an emphasize on pink.  I love bright and bold colors and it seemed perfectly fitting to create these fun cookies for my blogiversary.

SoftSprinkle Sugar Cookies

Makes: About 40 cookies
4½ cups All Purpose Flour
4½ teaspoons Baking Powder
1teaspoon Salt
1½ cups (3 sticks) Unsalted Butter, at Room Temperature
1½ cups Sugar
3Eggs
5tsp. Pure Vanilla Extract
Assortmentof Sprinkles
Preheatthe oven to 350 degrees F.  Line a baking sheet with a silicone  mat or parchment paper.*  Set aside until needed.  Place the different types of sprinkles in separatebowls.  Set aside.
Ina medium bowl, whisk together the flour, baking powder, and salt.  Setaside.
Inthe bowl of a stand mixer, cream the butter and sugar until light andfluffy.   Add the eggs, one at a time, mixing well after eachaddition.  Mix in the vanilla.  Scrape down the bowl and, with themixture on low speed, slowly add the flour mixture.  Beat the mixture until the ingredients arefully incorporated. 
Removethe bowl from the mixer and cover it in plastic wrap.  Place the bowl inthe refrigerator to chill for at least 1 hour.
Removethe dough from the refrigerator and using a tablespoon or a cookie scoop, scoopa large ball of dough.  Roll the dough into a ball and then slightlyflatten the ball to create a thick disk shape.   Dip one side of the dough into the sprinklesand then place on the prepared baking sheet, sprinkles side up.  Repeat with the remaining dough, spacing thecookies about 2 inches apart. 
Bakethe cookies in the oven until they have just set, about 7-10 minutes.  Ifthey start to turn light golden brown on the edges, they are done (they don’talways have to turn a brown color.)  Donot over-bake the cookies; you want them to be very soft.
Oncethe cookies are done baking, let them sit on the baking sheet for 2 minutes andthen transfer to a cooling rack to cool completely. 
*Youwill need multiple baking sheets to bake these cookies.  You can bake these cookies 3 baking sheets ata time, so it works great to work in batches of 3. 
Thesecookies last up to 7 days in a sealed container.

    Happy second anniversary!! You blog is so beautiful and I had no idea it has only been around for two years.
