My Favorite Chocolate Cupcake

Everyone needs a good basic chocolate and vanilla cupcake recipe.  I haven’t quite narrowed down my favorite vanilla recipe {I have so many I like!}, but I’ve had my go-to, favorite Chocolate Cupcake recipe for quite some time.  This is the recipe that I use almost every time I make chocolate cupcakes.  I rarely ever use a different chocolate cake recipe, unless I’m trying out a new recipe for fun or want a cake that is more rich and dense.  
This cupcake is the lightest and fluffiest chocolate recipe I’ve ever tried.  It always comes out so moist and perfectly baked.  One of my favorite things about this recipe is the flavor.  It doesn’t have an overwhelming chocolate flavor, so both chocolate lovers and people who don’t really love chocolate will enjoy these cupcakes. 
This is my go-to chocolate cupcake recipe, and I hope it becomes yours too!

Makes: About 24 Cupcakes
2 cups Sugar
1 ¾ cups All Purpose Flour
¾ cup Cocoa Powder
1 ½ teaspoon Baking Powder
1 ½ teaspoon Baking Soda
1 teaspoon Salt
2 Eggs
1 cup Milk
½ cup Olive Oil
2 teaspoons Pure Vanilla Extract
1 cup Boiling Water
To make the cupcakes, start by preheating the oven the 350 degrees F.  Line 2 cupcake pans with baking liners.  Set aside.
In a large bowl, sift together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.  Set aside. 
In the bowl of a stand mixer, combine the eggs, milk, olive oil, and vanilla.  With the mixer running on low, gradually add the dry ingredients until fully incorporated.  Scrape down the sides of the bowl and add the boiling water; mix until the batter is smooth.  The batter is supposed to be thin.
Divide the batter between the prepared cupcake liners.  Bake the cupcakes until a toothpick inserted into a couple cupcakes comes out clean, about 20-25 minutes.  Allow the cupcakes to cool in the pan for a couple minutes and then transfer to a cooling rack to cool completely.

    I love that this has only oil, no butter! So healthy! I can eat all 24, right?? 🙂

    I agree, everyone needs a favorite go-to chocolate cake recipe.  I have several!  I might have to try this one, I’ve never used olive oil in chocolate cake before.

    Interesting! Olive oil?!!! I’ve never done olive oil in a chococolate cupcakes! But it totally makes sense to me:)

    The cupcakes look so good.  If this recipe turns out as light and as fluffy as you say, then I’m anxious to try it.  Always looking for that perfect *from scratch* chocolate cake.  Thanks for sharing.

    I have a favorite chocolate cupcake that can’t be beat, but I would LOVE to try yours Krissy.   They look very fluffy and sound delicious.  I agree with Averie- interesting they are made with olive oil!
