Chocolate Soufflé Cupcakes

February 1, 2012
Last year I attempted to make a Raspberry Soufflé for Valentines Day.  Fail.  The top got super dark before the inside could even bake all the way.  It resulted in an undercooked, foamy, un-satisfying dessert.
That was my first attempt at a soufflé and it was not a good one.  We all know the first time can’t always come out perfect.  Some things we have to try and try again until they come out just right.
Thankfully my second attempt at a soufflé was much better.  I went with the classic chocolate soufflé and didn’t try to mess around with different flavors, such as raspberry.  I let the ingredients speak for themselves and created my own recipe to get the consistency just right – light and airy.  The result was better than I ever hoped.  It was oh-so-delicious.
To create a spin on the classic chocolate soufflé, I decided to make them in cupcake form.  I didn’t change up the recipe to accommodate a more cupcake-y texture.  I just baked the soufflés in cupcake liners and let them bake for no longer than 10 minutes.  Enjoy them right out of the oven with a little dusting of powdered sugar.
They’re small, individually sized, and perfect for Valentines Day.
PS – They’re Gluten Free too!

Crissy they look so good!  I want to dig in!

We need to do a San Diego meetup and each bring a dozen or two dozen treats…not even anything “special”.  Just what we have on hand…you may not have leftovers though.  My cupboards are busting at the seams!  lol

I don’t think I’d be adventurous enough to attempt baking a souffle in cupcake liners but I’m certainly happy that you are. These look delicious!
