Strawberry Chocolate Cupcakes

How was your year in 2011?  What were the important highlights that you will remember forever?  As for me, 2011 was quite a year.  In April, my husband and I packed up our home and moved across country for Steve’s baseball season.  It was his second year playing Professional Baseball and we made a big decision that I would follow him during the season.  This means bringing all my clothes, baking and cooking supplies, food styling props, and much {much!} more on the road for 6 months.
We started our journey from our home in San Diego and drove to Florida.  Then we drove up to Brooklyn, New York and spent the remaining part of the season there.  In September, we drove all the way back home, making it our second cross-country trip.  Traveling with my husband during the season isn’t the easiest thing – it takes a lot of organization, planning, and patience – but it’s completely worth it to see my husband fulfill his dream.
Also in April, I started this wonderful blog that I love oh-so-much.  It started out as something small to do while I was at home and Steve was at the baseball field.  But now it is much more than I could have ever thought of.  It is more to me than just a hobby.  It is a true passion – A passion to share my love for baking and cooking with others.   
Before I started this blog I knew I loved food but I wasn’t sure what I wanted to do with this love.  But now I know.  My dreams are endless.  I want to write that cookbook.  I want to have that baking show.  I want to make a difference in the food community.  It will happen.  I just have to be patient and continue to do what I know best – bake, cook, photograph, write, blog.
These are some of the major highlights that happened for me this year.  When I look back at 2011 these will be the first things that pop into my mind.  Good things.  Happy thoughts :).
Before you take time and look back at your year, I want to show you my last recipe post for 2011 – Strawberry Chocolate Cupcakes.  I picked this recipe for a few reasons:
1)   I love cupcakes.  Love. Love. Love.  They are my favorite dessert to make.
2)   This is my favorite chocolate cake recipe.  It’s moist, light, and incredible versatile.  It goes with all flavors and balances out any type of frosting.
3)   This is a variation of my favorite buttercream {which you see a lot here on the blog}.  It’s a basic buttercream that I just adore.  It’s smooth, creamy, and perfectly sweet. 
4)   Strawberry is one of my husbands favorite flavors.  When I’m asking him what type of jelly he wants on his PB&J, its always strawberry.  If I have a tray of desserts in front of him and some have strawberry in it, he will always choose those.  When I ask what fruit to bake with, the answer is no-doubt, always strawberry.
So as you’re ringing in the New Year with your family and friends, make sure to not only look back at your year but to also have one of your favorite desserts in hand.  Mine will be this chocolate cake.  Maybe it will be yours too?!

Strawberry Chocolate Cupcakes

Makes: About 24 Cupcakes
Chocolate Cupcakes
2 cups Sugar
1 ¾ cups All Purpose Flour
¾ cup Cocoa Powder
1 ½ teaspoon Baking Powder
1 ½ teaspoon Baking Soda
1 teaspoon Salt
2 Eggs
1 cup Milk
½ cup Olive Oil
2 teaspoons Pure Vanilla Extract
1 cup Boiling Water
Strawberry Buttercream
3 cups (6 sticks) Unsalted Butter, at Room Temperature
6 cups Confectioners Sugar
1 teaspoon Salt
1 teaspoons Pure Vanilla Extract
½ cup Strawberries, Pureed into ¼ cup of Strawberry Puree
To make the cupcakes, start by preheating the oven the 350 degrees F.  Line 2 cupcake pans with baking liners.  Set aside.
In a large bowl, sift together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.  Set aside. 
In the bowl of a stand mixer, combine the eggs, milk, olive oil, and vanilla.  With the mixer running on low, gradually add the dry ingredients until fully incorporated.  Scrape down the sides of the bowl and add the boiling water; mix until the batter is smooth.  The batter is supposed to be thin.
Divide the batter between the prepared cupcake liners.  Bake the cupcakes until a toothpick inserted into a couple cupcakes comes out clean, about 20-25 minutes.  Allow the cupcakes to cool in the pan for a couple minutes and then transfer to a cooling rack to cool completely.
While the cupcakes are cooling, make the buttercream.  Cream the butter in the bowl of stand mixer fitted with the whisk attachment, about 5 minutes.  Add the confectioners sugar and salt and mix, gradually increasing in speed, until the sugar is fully incorporated.  Mix in the vanilla.  Add the strawberry puree and beat until the mixture is light and fluffy, about 5 minutes – you may need to stop the mixer and scrape down the sides of the bowl a couple times. 
To frost the cupcakes, place the buttercream in a large piping bag fitted with a closed-star tip.  Starting in the center of the cupcake, pipe a swirl design on the complete surface of the cupcake.  Repeat with the remaining cupcakes. 
Serve and enjoy!
These cupcakes last up to 1 week in a sealed container.

    Oooh yummy! I love a simple chocolate cupcake, and the frosting is so pretty! Strawberries are best fresh, I think, so this would be perfect for me!

    These look delicious! I’ve had a hard time before with runny strawberry buttercream, but this looks like the perfect consistency. They’re so pretty too! Have a happy new year 🙂

    Interesting recipe! Quick question, why do you sift in the sugar with the dry ingredients? Most of the time, sugar is a wet ingredient. Does it make a difference in this recipe? Just wondering! The cakes look wonderful 🙂

    Hi Christina,
    Because oil is the main “fat” in this recipe and not butter, there is no need to combine the sugar with the wet ingredients and cream the mixture.  This recipe works best to combine the wet {eggs, milk, vanilla, oil} ingredients and then add the dry ingredients.  Hope this helps :).  Enjoy!

    does olive oil really impact the flavor?

    The oil doesn’t really change the flavor, it mainly helps with keeping the cupcakes moist.

    hey I’m a freshman in high school and I love to bake, and since my friends are young like me we are all sugar crazy. I made these cupcakes and they all loved them! I added extra strawberries, but other than that they were amazing! Thanks 🙂

    Hi Krissy. Your cupcakes look amazing. I would like to make them for for my daughter’s birthday party this weekend. I am just double checking that for 24 cupcakes, 3 cups of butter is the correct measurement for the frosting. In comparison to other recipes on the internet, most do not use this much butter for the same amount of frosting, so before I head off to the store, I just wanted to check with you. Thank you!
