S’mores Ice Cream

If it’s not too late to make s’mores then it’s not too late to make ice cream.

I mean who said you can only make ice cream in the summer?  If you can enjoy it all year – which, yes, I do – then you certainly can make it once summer is over.

So that’s exactly what I did.  I made ice cream for you. And to continue with s’mores week, I made what else than s’mores ice cream.

This ice cream has all the s’mores components – marshmallows, Graham crackers, and Hershey’s chocolate.  But it’s not like it’s just vanilla ice cream with these mixed in.  This ice cream has melted marshmallows in the ice cream base!  Yes, that’s right!

You melt marshmallows right into the milk and heavy cream.  No extra sugar needed.  The marshmallows add enough sweetness for the whole ice cream.  Chill the ice cream in an ice cream maker and add the graham crackers and chocolate, and extra mini-marshmallows to bring it over the top.

You’ve just created a cold treat that taste likes s’mores.  I know its weird to think that ice cream can taste like s’mores because s’mores are hot.  But it really does. Seriously!  If you don’t believe me, try it.  You’ll see :).

S’mores Ice Cream

Makes: About 1quart
5 ounces of Marshmallows, ½ of a bag (I like to use the large ones)
1 cup Milk
1 ½ cups Heavy Cream
1 tsp. Pure Vanilla Extract
2 Hershey’s Chocolate Bars, chopped into small chunks
3 Graham Cracker Sheets, chopped into small chunks
½ cup Mini Marshmallows
In a large saucepan, heat the marshmallows, milk, and heavy cream over medium heat.  Stir until the marshmallows have completely melted and the mixture is smooth.  Remove the pan from the heat and stir in the vanilla.  Let sit for 5 minutes. 
Transfer the mixture to a medium bowl and cover in plastic wrap.  Place in the refrigerator to chill completely. 
Once chilled, pour the mixture into your ice cream maker and freeze according to manufacture instructions. 
When the mixture has completely thickened and it is almost finishing freezing, add in the chocolate, graham crackers, and mini-marshmallows.  Allow it to stir for 5-10 seconds until the add-ins have completely mixed in. 
Transfer the ice cream to a sealed container and place in the freezer to firm up, about 2 hours.  Serve and Enjoy J!
This ice cream can last about 1-2 weeks in the freezer.  After the first couple hours, you will need to let it sit out for 5-10 minutes to thaw until it’s soft enough to scoop.
