I’m pretty good about knowing if I like a recipe or not. With baking so much I am able to look at recipe and know if I will like it’s outcome. If I see something I like in a recipe I save it and make it whenever I get a chance. Usually the outcome is exactly like I wanted. But sometimes the recipe fails me. It’s either that I messed up something while making it, or that the combination of ingredients just isn’t to my liking. They both don’t happen too often, but they definitely do happen.
As far as messing up recipes, this normally happens when I rush baking. A word of advice – Never rush baking. Take your time! If you take your time to look over the recipe, read it thoroughly, and follow the directions, your creation will always turn out. If you rush you give yourself more chance to miss important steps, likely resulting in a sub-par dessert. This is why I always try to give myself ample time in the kitchen. If I only have a small amount of time to make something, I will make sure I am able to bake the dessert correctly with enough time.
And as for me not liking the way the recipe turns out, this happens when no matter if I did everything correctly, the dessert still doesn’t taste like I wanted it too. I’ve had this happen mostly with cakes and breads. It’s easier for cakes to come out too dry, or breads to taste too tough.
One item that I have tried multiple recipes of and didn’t really like any of them is Flourless Chocolate Cake. It seems to always come out too dry and not have the right taste of chocolate that I’m looking for. However…. Recently I made this Flourless Chocolate Cake recipe and I loved the outcome. It wasn’t dry at all. It actually was very moist. And the chocolate taste was exactly what I was looking for – Sweet and not to bitter.
This recipe takes almost no time to put together. It’s really like baking brownies. These actually taste a lot like brownies! Chewy and dense with a nice chocolatey goodness. And one of the best parts of this type of cake is that you don’t need to frost it. Sprinkle some powdered sugar all over it and your done. I sliced a strawberry to add some color and jazz it up a little bit :).
You can also serve this cake with ice cream or whipped cream. I didn’t do either because I liked it on it’s own. But everything always tastes better with a little extra creaminess, so I know it’d taste great either way :)!

Makes: 1 9-inch (Single Layer) Cake
4 ounces of Good Quality Semi-Sweet Chocolate
½ cup (1 stick) Unsalted Butter
¾ cup Sugar
½ cup Cocoa Powder (I used Vahlrona)
Confectioners Sugar, for dusting (Optional)
Preheat the oven to 375 degrees F. Line the bottom of 9-inch round cake pan with parchment paper, and lightly oil the inside of the pan.
Coarsely chop the chocolate and place in a microwave safe bowl. Place in the microwave for 30 seconds. Take out and stir. Place back in the microwave for 30 seconds. Take out and stir again. Place the butter in the bowl with the chocolate. Microwave for another 30 seconds. Take out and stir together the chocolate and butter until it is smooth. If the chocolate is not melted enough, microwave for another 30 seconds. If you used a small bowl to melt the chocolate, transfer the chocolate and butter mixture into a large bowl and add the sugar; whisk to combine. Whisk in the eggs until fully incorporated. Mix in the cocoa powder until the batter is smooth. Do not overbeat the batter.
Pour the batter into the prepared pan. Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10-15 minutes, and then invert onto a cake stand or plate. Dust with confectioners sugar. I also added a strawberry on top for added color. Serve and enjoy 🙂!
