Kiwi-Blackberry Popsicles

Right now, Steve and I are living in Florida.  Steve plays Professional Baseball and we left home (lovely and beautiful San Diego!) last month to go on the road for the season.  We went from San Diego – where there is nearly perfect weather the whole year – to Florida, where it is hot hot hot!  It’s not only hot but it’s also humid!
With the weather being so hot in Florida, we often indulge in refreshing summer treats.  I recently made these wonderful Kiwi-Blackberry Popsicles that definitely kept us cool in this hot weather!
These popsicles tasted like iced fruit on a stick!  They were so juicy and refreshing!  I layered the popsicles with two different flavors, kiwi and blackberry.  However, you can always just choose one fruit, or even substitute out any fruit that you like.  Each layer only included 3 ingredients – the fruit, sugar, and water.  That’s it!  The simplistic nature of each layer really brought out the natural flavor of the fruits.
These popsicles couldn’t be easier to put together!  It takes only a couple minutes to create the mixtures for each layer, and then all you have to do is freeze the popsicles.  With these being so easy to make they would be perfect for a party on a hot day!  Everyone will love these tasty popsicles!


Kiwi-Blackberry Popsicles

Makes: About 10 Popsicles, depending on the size of the cup and how many layers you create
Kiwi Layer
10 Kiwis, peeled and cut into chunks
4 tbsp. Sugar
6 tbsp. Water
Blackberry Layer
2 cup Blackberries
4 tbsp. Sugar
6 tbsp. Water
To Assemble the Popsicles
10 5-ounce plastic or paper cups
10 wooden popsicle sticks
To make the kiwi layer, combine the kiwi, sugar, and water in a food processor.  Pulse until smooth.  Chill in the refrigerator until needed.
To make the blackberry layer, combine the blackberry, sugar, and water in a food processor.  Pulse until smooth.  Chill in the refrigerator until needed.
To assemble the popsicles, pour 1 tablespoon of the kiwi mixture in the bottom of each cup.  Freeze for 30 minutes and then pour 1 tablespoon of the blackberry mixture on top of the kiwi layer.  Continue layering, freezing 30 minutes between each layer, until no mixtures are left.  On the 2nd to last layer, stick 1 popsicle stick into each cup.
To take the popsicles out of the cup, let the cups sit on the counter for about 15 minutes to thaw slightly.  Carefully remove the popsicles from the cups and serve immediately.  Enjoy 🙂!
