Apple Pie

May 3, 2011
Happy National Teachers Day!  For those of you who have children, or are in the education field, I’m sure you know that this week is Teachers Appreciation Week, and today is National Teachers Day!  If you don’t know, don’t worry – I am here to tell you 🙂.
Teachers have always been a big part of my life.  I actually got my college degree to become an elementary school teacher.  Even though I didn’t follow through with this career path, I still have other close connection to teachers.  My dad was a high school teacher for years and my sister-in-law was an elementary school teacher up until this past year.  My sister-in-law is still in the education field as she works in the district offices – so she technically is still a teacher 🙂.  I dedicate this post to her and all the other teachers!
Since the age-old item to give teachers is an apple, I thought nothing would be better than to bake an apple pie.  Cute, huh 🙂.
I love pies!  They are one of my favorite desserts.  There is something about the combination of a flaky crust with a yummy filling that just gets me.  And that crust is definitely the item that brings a pie from good to great.  I have a recipe for a pie crust that is amazing!  The crust always comes out unbelievably flaky, with the perfect balance of butter and flavor.  This is the perfect crust!
With this perfect crust, and an incredible apple filling, this pie was delicious!  The crust was – as usual – flaky and buttery, and the filling had the perfect addition of soft, flavorful applies, with spices popping throughout.  This apple pie was definitely the best I have ever had!

Hey, how come this wasn’t dedicated to me!!!! One of the reasons I stayed as a teacher so long was that I could spend time at school with you and your sister. I think this should be rededicated!
